Nyama Ne Nyemba (Steak & Bean Stew)
There seem to be innumerable varieties of beans, and they are an ever-present favorite of many 'soul food' menus. Apart from the protein and fiber content, beans are easy to grow and some varieties are hardy and drought-resistant, so they are a staple of the African diet all over the continent. Beans are versatile and delicious and can be eaten dried or fresh in a variety of dishes. Nyama Ne Nyemba is a Zimbabwean specialty.
Ingredients:
- 3 onions, thinly sliced
- 45 mL (3 tablespoon) vegetable cooking oil
- 1 kg (2 lbs) shoulder steak or spareribs, diced
- 2 cloves garlic, crushed
- 1 green chili (hot peppers), crushed
- 45 g (3 tablespoons) curry powder
- 2 medium tomatoes, sliced or diced
- Salt and peper to taste
- 1 kg (2lbs) cooked kidney beans
- Juice of 1 lemon
Preparation:
In a stew pot, brown the onions in the oil until golden brown. Add the meat and sauté over medium heat for about 5 minutes, stirring continuously. Lower the heat and cook gently for a further 15 - 20 minutes. Add the garlic, chili (hot pepper) and curry powder and cook for about 3 minutes. Stir in the tomatoes and cook for another 3 minutes.
Season to taste, stir in the cooked beans and simmer over low heat for about 15 minutes.
Transfer to a serving dish and drizzle the lemon juice all over the top. Garnish as you wish and serve with boiled rice, or simply by itself as a nutritious meal.
